Pedro Ximénez grapes ripened under the Andalusian sun
Wines made from Pedro Ximénez sun-dried grapes from our Villargallegos estate. During the asoleo we spread the grapes harvested in August on the paseras, turning the bunches by hand for a regular and homogeneous drying. In the cellar, the raisined grapes are spread out in mats and a hydraulic press extracts the must, flooding the cellar with aromas of cherry resin, quince jelly and honey.
Pedro Ximénez 1927 is one of the winery’s legacies. The complex ageing system of Solera and Criaderas produces a very old Solera 1927 wine that is slightly refreshed each year with younger wines. A unique experience of maturity and freshness that has been classified by the WAWWJ among the 50 best wines in the world for four consecutive years.
