We grow the grapes with the intensity and quality of flavors and aromas that the care of our organic vineyard and the work with native yeasts allow us, we monitor their natural process and transfer all the richness of the fruit into the wine.

Pedro Ximénez vinegars
Organic vinegars crafted from the acetic fermentation of our Pedro Ximénez wines. Aged for years in American oak barrels following the traditional “solera and criaderas” system that mixes very old vinegars with younger ones thus mothering the young vinegars. An unique experience of maturity and freshness.
