Pedro Ximénez Wine

Pedro Ximénez grapes ripened under the Andalusian sun

Wines made from Pedro Ximénez raisins from our estate in Villargallegos. During the sunbathing period, we spread the grapes harvested in August on the drying racks, turning the bunches by hand for a regular and homogeneous drying. In the winery, the raisined grapes are spread out in baskets and a hydraulic press extracts the must, filling the winery with aromas of cherry resin, quince jelly and honey.

One of the most original wines on the planet

Pedro Ximénez is one of the most original wines in the world. Its name comes, it is said, from the name of a soldier in the Spanish army who brought this grape variety to Andalusia from the Rhine centuries ago.

The grapes are spread out in the sun on the "paseros" (esparto mats). Every day the grapes are carefully turned, to ensure homogeneous roasting in the Andalusian sun, until they are practically raisins. The objective is to reduce the liquid content of the grapes, so that the resulting must contains more than 300 grams of sugar per liter. When the grapes reach the desired degree of sweetness, they are crushed and, before fermentation begins, fortified to reach an alcohol content of nine percent.

Pedro Ximénez wine: soft, sweet and tender

The resulting wine is called tender wine. Subsequently, the alcohol level is progressively increased to 16-18 percent and the wine is matured following the solera and criaderas system.

It is a dark mahogany-colored wine, with deep aromas of raisin. Soft and sweet in the mouth. Full, vigorous and with perfect balance. Its graduation is about 15º.

A magnificent example of this wine, PEDRO XIMÉNEZ SOLERA FUNDACIONAL, awarded the Bacchus de Oro in 1998. The Bacchus awards are the most prestigious Spanish awards in the wine industry and an internationally recognized award where each year wines from the most prestigious wineries in the world compete.
