Visits to the winery and organic vineyard

(approx. 120 minutes ):

We will learn what it is and what is undertaken in an organic vineyard: the importance of a vegetation cover, biological pest control, the role of hedges and insects, indigenous yeasts and the importance of the soil in wine.

We want you to understand the reason why our wines belong to their soil.

10 minutes: Reception.
30 minutes: Visit to the organic vineyard and tasting of a Verdejo white wine in the vineyard. Explanation of vineyard management project with vegetation cover, developed in collaboration with the University of Cordoba and recognised by the Ministry for the Environment in 2006, with the award for “Best ecological company in Spain”. Nowadays, the vineyard is regularly visited by technicians of the Government of Andalusia as regards their organic management training.
10 minutes: Presentation of the “Follow your vine” programme (sponsoring the vines). You can follow, free of charge, the evolution of a vine in our organic vineyard: worry about the climate, suffer from pests and enjoy contemplating the beauty of the veraison, the weeping of the vines, the budding… You can also come and visit it, carry out its tasks and attend the meetings that we organise periodically: pruning, topping, thinning, harvesting and the arrival of the new wine.
20 minutes: Visit to the winery and explanation of the winemaking system. Biological ageing system under a veil of flor, oxidative and mixed ageing: Ageing system by solera and criaderas. Our wines are fermented using the native yeasts that are present in the soil of the vineyard and arrive at the winery attached to the skin of the grape. That is why the ecological care of our vineyard is so important.
50 minutes: Classification of wines and guided wine tasting (4) organic wines.

Visit to the Lagar de los Dolores

(approx. 90 minutes):

This historic 13-hectare estate of Pedro Ximénez and Moscatel is cultivated using plant covers that enrich the soil and promote biodiversity. The winery is located in Moriles Alto, an area whose prestige is based on two fundamental pillars: the altitude and the uniqueness of its soil, the albariza. This combination of factors creates an exceptional terroir and wines recognized for their complexity and elegance, a reflection of this white and generous land. It is included in the Moriles winery and vineyard route and can be visited throughout the year.

10 minutes: Reception.
Upon arrival at Lagar de los Dolores, you will be welcomed in an emblematic setting dating back to 1916, surrounded by vineyards that extend over 13 hectares. A brief introduction to the history of Lagar de los Dolores and its new life from Bodegas Robles.
20 minutes: Walk through the vineyard.
Explore the vineyards where Pedro Ximénez and Moscatel varieties grow in harmony with nature. Explanation of sustainable viticulture practices with plant covers that respect the natural balance and allow obtaining wines that express the true essence of Moriles Alto.
20 minutes: Visit to the winery facilities.
Take a tour of the wine press, the fermentation cellar and other historic facilities of the complex. The Lagar de los Dolores, built in 1916 during the resurgence of the vineyard after the phylloxera crisis, has a traditional structure. The main buildings are located around a central courtyard: the house, the wine press, the fermentation cellar with 432 m² of built space, and the old stables and barns.
40 minutes: Take a tour of the wine press.
