wine on the branchIt is the wine that we produce and bottle immediately after the harvest, preserving the fresh and young characteristics of the recently harvested grapes and the natural carbon dioxide from its fermentation. It is a wine that reflects the purest flavors and aromas of the original grape.
"Raw"It is the wine that we extract directly from the barrel, without clarifying or stabilizing. It is the wine in its most delicate state, with all the color, body and aromas provided by the flor veil, a layer of yeast that forms on the surface of the wine inside each butt and that our cellar foreman knows how to keep permanently alive. The extraction of the wine – it is taken out – is carried out with great care from the middle of each butt, thus ensuring minimal disturbance of the flor veil. Made in very limited quantities to maintain the flower of the solera. The most expressive wine than ever.
Bodegas Robles wines ferment using native yeasts that are present in the soil of our Villargallegos vineyard and arrive at the winery attached to the skin of the grapes. That is why caring for the vegetation cover of our vineyard is so important: it is a nursery for yeasts and is ultimately responsible for our wines being able to express their identity.
