Drying Pedro Ximénez grapes (La pasera). Grape harvest 2017

Bodegas Robles is one of the few wineries that still have their own “paseras”, an area specially selected for the of the grapes. We take special care that the drying is regular and homogenous, turning the grapes manually. It is for this manual care, that the elaboration of the Pedro Ximénez wine is considered the last artisan work of the field in Andalusia.
